We’re calling this “As You Wish” because you really can get creative with this crustless quiche. I have offered several variations at the bottom of this post, but just about any ingredients that you think sound good are worth a try added to this basic cheese quiche. Another option that is always a hit: Cut the quiche into small (about 1″) cubes and serve them as an appetizer. I’m the first to admit this is a pretty heavy recipe and the appetizer option is a great way to have a little taste without undoing your whole day’s calories!

Ingredients for As You Wish Crustless Quiche

BASE (See variations below.)

  • 1.2 C. butter
  • 1/2 C. flour
  • 6 large eggs
  • 1 C. milk
  • 16 oz. Monterey Jack cheese
  • 3 oz. cream cheese
  • 2 C. cottage cheese
  • 1 t. baking powder
  • 1 t. salt
  • 1 t. sugar

 Instructions

STEP 1
Preheat oven to 350°. Melt butter in a small pan then add the flour, stir and cook until smooth. Set aside.

STEP 2
Beat eggs, add milk, cheese, baking powder, salt, sugar and butter mixture (and any additional ingredients, as you wish). Mix until well blended. Pour into a 9″ x 13″ greased or sprayed glass baking pan. Bake uncovered for 45 minutes.

variations:
  • VEGGIE: Follow instructions for the base, adding 1 C. chopped asparagus and 1/2 C. chopped green onion to mixture along with other ingredients.
  • SAUSAGE: Follow instructions for the base, adding 1/2 lb. cooked breakfast sausage and  1 t. thyme along with other ingredients.
  • HAM & SWISS: Reduce the Monterey Jack cheese to 8 oz. and add 8 oz. Swiss cheese. Also add 1/2 lb. ham cut in small cubes, 1/2 C. green onion, 2 t. dried mustard and 1/4 t. ground cloves. Bake per instructions.
