Talk about “super foods” and avocados are way up there on the list. They’re delicious, they are available all year-round and they pack a nutritional wallop! And this isn’t news to anyone. While these days we tend to associate guacamole with Mexican dishes, it actually originated with the Native American Aztecs as early as the 1300s. Then, guacamole was made solely of mashed avocados and was incredibly popular because of its high nutritional value. Obviously, as popularity of this dish spread, so did the variations on how to make it. This recipe is SO SIMPLE, you truly can make it “in a flash.” People like it so much that we have learned to make a double recipe if we are serving more than 4. So enjoy! It’s good for you! Ingredients for In-A-Flash Guacamole

  • 4 ripe medium-size avocados
  • 1/3 C. good salsa (we like to use this Homemade Salsa)
  • juice of 1/2 of a lime
  • 3/4 t. salt
  • fresh ground pepper to taste
  • 1 – 2 green onions, chopped finely
  • 1/4 t. ground cumin

 Instructions

STEP 1
Mash cored and quartered avocados to desired texture in a medium-size bowl. (We like to leave the avocados a little chunky.) Add the salsa, green onion, salt, pepper and cumin. Stir gently.

STEP 2
Squeeze the juice of 1/2 a lime into mixture and stir thoroughly. Adjust seasonings to taste. Serve as a dip with corn chips. Guacamole is also a great accompaniment for many other dishes!

CORING AN AVOCADO
Using a chef’s knife, carefully “whack” the core of the avocado with the sharp edge of the knife.
Twist the knife about a quarter-turn, then gently pull the core away.
