This delicious cranberry bread was adapted from one of our favorite Thanksgiving storybooks, Cranberrry Thanksgiving. We continue to make it throughout the holiday season and are often nibbling a slice as we open our Christmas gifts. (And by the way, it also makes a great gift for teachers, neighbors or to bring to holiday parties.)
Ingredients for Cranberry Bread
- 2 C flour
- 1.25 C sugar
- 1.5 t baking powder
- 1 t salt
- 1/2 t baking soda
- 1/4 C butter
- 1 egg, beaten
- 1 t grated orange peel
- 3/4 C orange juice
- 1.5 C coarsely chopped cranberries
- 1.5 C whole cranberries
- 1 – 2 t. raw sugar
Instructions
STEP 1
Sift flour, sugar, baking powder, salt and baking soda into a large bowl.

Cut the butter into the flour mixture until it is crumbly.
STEP 3
Add egg, orange peel and orange juice then stir just until the mixture holds together.
STEP 4
Fold in the coarsely chopped cranberries followed by the whole cranberries.
STEP 5
Spoon the batter into one 9″ x 5″ or two 8″ x 4″ greased bread pans and sprinkle the top with 1 – 2 teaspoons of raw sugar. Bake at 350° for one hour to one hour and 10 minutes. Rotate the pan(s) when the bread has been baking for 30 minutes. Bread is finished when the crust is golden and a toothpick inserted comes out clean.
