Everyone loves this salad! The balsamic vinaigrette dressing is so good that we like to keep it in the refrigerator and use it with any recipe that calls for a vinaigrette

Ingredients for Pear Asiago Spinach Salad

  • 5 T. olive oil
  • 3 T. balsamic vinegar
  • 1 T. honey
  • 1 t. Dijon mustard
  • 1 T. finely chopped green onions
  • 5 C. spinach, trimmed and washed
  • 2 ripe Bosc pears, diced
  • 2 oz. Asiago cheese, grated
  • 2 oz. cashews


In a jar combine olive oil, balsamic vinegar, honey, Dijon mustard, green onions and salt and pepper to taste. Shake well. Toss greens and about half of the cheese in a large salad bowl with about two-thirds of the dressing. Distribute dressed greens to individual salad bowls or plates and top with the rest of the cheese, all of the pears and all of the cashews. Drizzle with the rest of the dressing as desired. Makes 4 servings.
